Gluten Free Apple Bread

Gluten Free Apple Bread is full of warm yummy goodness in every bite. It has a middle layer of brown sugar, butter and apples and is loaded with flavor from store bought apple pie spice. Gluten Free Apple bread is everything a fall loaf should be.

Ingredients for the Brown sugar apple mixture

  • 1 Granny Smith Apple
  • 2 Tbsp Butter
  • 1/4 Cup Brown Sugar

Dry Ingredients

  • 1 1/2 Cup Gluten Free Flour- I use Cup 4 Cup
  • 3/4 Cup White Granulated Sugar
  • 3/4 Cup Brown Sugar
  • 2 Tsp Apple Pie Spice
  • 1 Tsp Baking Soda
  • 1/2 Tsp Baking Powder

Wet Ingredients: Make sure all wet ingredients are at room temperature.

  • 1/2 Cup Buttermilk
  • 1/2 Cup Full Fat Sour Cream
  • 1/2 Cup Vegetable Oil
  • 2 Large Eggs

Instructions

  1. Wash and peel one granny smith apple. Cut the apple into small chunks.
  2. In a small non stick skillet, melt 2 Tablespoons of butter on low heat. Once the butter is melted, add the apples into the skillet. Saute the apples until soft 5-10 minutes. Once the apples are soft, remove the apples from the skillet and add to a bowl. Add the 1/4 cup brown sugar, and stir together until the apple chunks have warmed the brown sugar and is thoroughly combined. Set aside until needed.
  3. Sift the flour: combine the white and brown sugar, and the apple pie spice. Then add baking soda and baking powder. Stir until mixed together.
  4. Add the two eggs, buttermilk, sour cream and vegetable oil to the dry ingredients. Use a hand mixer to combine all ingredients. The batter will be on the thick side.
  5. Using a regular size loaf pan,-spray with non stick cooking spray. I use the butter flavor.
  6. Add half the mixture into the loaf pan.
  7. Add the apple brown sugar mixture and spread evenly over the bottom layer.
  8. Add the rest of the mixture to the loaf pan.
  9. Optional-you could always sprinkle a little bit of white and brown sugar to the top of the loaf. This is something I do rather often.
  10. Bake in the oven at 350 until a toothpick inserted comes out clean. I cook mine for about an hour. Each oven cooks differently. I would check at 50 minutes and check every 5 minutes so you do not over bake it.
  11. Take out of the oven and let fully cool before removing it from the loaf pan.
  12. Eat and enjoy.

Notes

  • Make sure your ingredients say GF on the label.  
  • Let the bread cool completely before cutting. I would allow at least an hour. If you try to cut it while it still warm, the slices can crumble and fall apart.
  • I suggest eating this within two to three days. Gluten free flour can be dense, and you want this to be moist and delicious.
  • For storing, wrap the bread up in a layer of saran wrap then a layer of foil. You can also store this in a bread storage container. I have two as I bake frequently. You could freeze this for up to 2 months.
  • To make this bread extra special, I heat it up and add a nice slab of butter or cream cheese.
  • If you find the top of the bread is browning too fast, put some foil on the top to slow the browning of the top of the bread and allow the bread to finish cooking in the center.
