Almond Flour Waffles

These almond flour waffles are soft and fluffy on the inside, and crispy on the outside. Almond flour waffles are perfect to eat for breakfast on lazy Sunday mornings with family. These waffles really are the perfect weekend breakfast. They store well and freeze great, which makes them ideal for meal prep.

Ingredients

  • Almond Flour– 2 Cups
  • Tapioca Starch- 1 Cup
  • Canola Oil- 4 Tbsp
  • Salt- 1/2 Tsp
  • Vanilla Extract- 1/2 Tsp
  • Baking Powder- 2 Tsp
  • Large Eggs- 2 (room temp)
  • Buttermilk- 1 Cup
  • Powdered Sugar 1/4 Cup for Dusting
  • Maple Syrup- 1/2 Cup

Instructions

  • In a large mixing bowl, add the almond flour, tapioca starch, salt, baking powder, and mix together with a whisk.
  • Add the two eggs, canola oil, buttermilk and vanilla extract. Whisk to just combine the ingredients.
  • Heat the waffle iron on the highest setting, and grease to prevent sticking. For my waffle iron, my settings go to 8. So I set mine between 7-8.
  • Using a ladle, scoop out the batter into the waffle maker.
  • Each waffle took about 5-7 minutes. I wait until the red light turns green before opening the waffle maker.
  • Take out with tongs and set aside. I put In an oven safe dish and heat in the oven until ready to eat.
