I have been a waffle lover for as long as I can remember. I do love French Toast and Pancakes, but there really is something so special about eating home-made waffles. There is nothing quite like having warm waffles served with syrup, fruit and powdered sugar. And for really special occasions- whipped cream.
Almond flour is really becoming a favorite of mine. It’s a great flour to cook with because it is naturally gluten free and low carb.
The base of these waffles is almond flour, followed by a few other ingredients. Waffles really are the greatest thing to make on a Saturday or Sunday morning, or for Brunch. I’m definitely okay with waffles for dinner because breakfast for dinner? What could be better than that? And the best part is that these waffles will be ready in less than 30 minutes.
THESE GLUTEN FREE WAFFLES ARE ALSO SUGAR FREE
For starters, these waffles are so easy to make. They’re gluten free and sugar free. I do have to say that my almond flour waffles are one of my favorite recipes.
They have an utterly delicious smell, and great flavor. Warm maple syrup drizzled over the top just makes these waffles extra special. Now, I do top mine with powdered sugar, but you can definitely omit that without any worries.
I can promise that this almond flour recipe will become your new favorite breakfast recipe. There is no added sugar, except for a dusting of powdered sugar, and you would never know that by tasting these delicious waffles.
TIPS AND TRICKS
- Use blanched or superfine almond flour-not almond meal. This will ensure a lighter and fluffier texture for your waffles.
- Baking powder is essential to give the waffles some extra rise and fluffiness.
- Make sure you use room temperature eggs.
- Vanilla extract helps enhance the waffles flavor.
- Buttermilk gives the waffles creaminess, and a slight tang.
- Do not over-mix the ingredients. Just whisk everything together in one bowl until combined.
- Grease the waffle iron generously.
- I use powdered sugar for dusting the waffles. Yo can omit if you’re trying to go sugar free, or you can use a powdered sugar substitute if you’re doing keto. Also, for keto- you would use heavy cream versus buttermilk. These are great for keto as they are low carb.
- I use a soup ladle to fill my waffle iron. This makes 2 really large 2 square waffles. For a family of four or really big eaters, double the recipe. The batter is very thick for this recipe.
- If your batter is too thin, add extra almond flour.
THESE WAFFLES ARE LOW CARB
Almond flour is low carb. So, for anyone on a low carb or keto diet, these waffles would be the perfect choice versus using gluten free flour or another substitute.
CAN I SUBSTITUTE COCONUT FLOUR
Unfortunately no. This isn’t the recipe where you can do that. Coconut flour has a different consistency and the instructions would be different.
STORING AND FREEZING TIPS
- Storing: Leftover waffles can be stored in the refrigerator, covered for about 5 days.
- Freeze: Place waffles in a ziplock baggie and store them in the freezer for up to three months.
- Reheat: Try to avoid the microwave- that will just make them soft and not very crispy. Reheating in a toaster oven is the best option.
ALMOND FLOUR AND OTHER NECESSARY INGREDIENTS
- Almond flour is the base of this recipe. Be sure to use almond flour and not almond meal. Almond meal would drastically change the final recipe.

WHAT’S THE DIFFERENCE BETWEEN ALMOND FLOUR AND ALMOND MEAL?
Almond meal is made fro whole ground almonds with the skin still on. Almond flour is made from blanched almonds without the skin. I find that almond flour works best for baking. Using almond meal instead of almond flour will result in different textures, and can yield significantly different results.
WHY IS TAPIOCA STARCH A NECESSITY?
Tapioca flour helps almost like a binder. It also helps with texture. Tapioca Starch helps bind and hold all the ingredients. This is the key to having perfect waffles come out every time.
HOW TO KEEP THE WAFFLES WARM?
To keep the waffles warm and crispy while the others are cooking, preheat your oven to 200 degrees F, and place the waffles in an oven safe dish to stay warm.

TOOLS NEEDED
USE A HOTTER SETTING FOR YOUR WAFFLE IRON TO ENSURE THE BEST ALMOND FLOUR WAFFLES
As almond flour waffles take longer to cook, make sure you use a higher setting on your waffle iron. If you set your waffle iron on too low of a setting, the waffles won’t finish cooking, and they’ll be doughy, and will pull apart when you open it. Make sure you use a generous amount of non-stick cooking spray on each side of the waffle iron. Also, make sure you non-stick cooking spray after each waffle is made.
Do not open the waffle maker while they are cooking. Top your waffles with fresh berries, maple syrup, powdered sugar or whipped cream.

- Almond Flour– 2 Cups
- Tapioca Starch- 1 Cup
- Canola Oil- 4 Tbsp
- Salt- 1/2 Tsp

- Buttermilk- 1 Cup
- Powdered Sugar 1/4 Cup for Dusting
