Easy Gluten Free Baked Frittata Recipe

My Easy Gluten Free Baked Frittata Recipe is perfect to make for an easy weeknight dinner, or for brunch on Sunday’s. Made with organic eggs, ham, kale and cheddar cheese, this meal is healthy and full of taste in every bit. You can make this ahead and eat throughout the week, or freeze for an easy meal prep during the week.

Ingredients

  • Organic Large Eggs- 10
  • Ham Steak- 8 Ounces (make sure it’s gluten free)
  • Frozen Chopped Kale- 10 Ounces
  • Heavy Cream- 1/3 Cup
  • Salt and Pepper to taste
  • Unsalted Butter- 3 Tablespoons
  • Nonstick Cooking Spray
  • Shredded Cheddar Cheese- 1 Cup

Instructions

  • Using a cast iron pan, turn stove on to just under medium heat. Once the pan has heated up, add 1 tablespoon of butter and let it melt.
  • Preheat oven to 400 degrees F.
  • Cut the ham steak into small bite sized pieces. Try to make them similar in size so that they cook evenly.
  • Add the cut ham to the cast iron pan, and sauté for about 6 minutes and slightly browned. Remove the ham for the pan and set aside.
  • Add two tablespoons of unsalted butter and let melt. Then, add the frozen kale and saute for about 10 minutes.
  • In a medium sized bowl, whisk together 10 large eggs with the heavy cream and salt and pepper. Make sure you season the egg mixture really really well. This is the only seasoning this has.
  • After the kale has finished cooking, turn the stove off, and let the pan sit for about 15 minutes with no heat before adding the eggs.
  • Add the ham back to the pan. Spray cast iron pan well with nonstick spray. I use the butter flavor.
  • Slowly add the egg mixture and make sure it’s evenly spread.
  • Top with the cheddar cheese and put in the oven.
  • Bake for about 25-30 minutes or until set. The middle should not jiggle. I cover mine with foil for the last 10 minutes of cooking to prevent browning.
  • Let cool for about 10 minutes and enjoy.
