Sugar snap pea salad is a healthy and totally satisfying dish. This salad recipe has sweet sweet sugar snap peas and fresh ricotta, which adds creaminess and texture. Top it off with shredded rotisserie chicken and a home-made citrus tangy dressing, and you have the perfect dish. However, you can omit the chicken to make it vegetarian, or add salmon, which would be fantastic.

Ingredients

  • Extra Virgin Olive Oil- 3/4 Cup
  • Citrus Champagne Vinegar- 1/4 Cup
  • Honey- 2 Tsp
  • Shallot- 1 Small Shallot Finely Chopped
  • Lemon- Zest and Juice of 1 Lemon
  • Fresh Sugar Snap Peas- 2 8 Ounce Bags
  • Rotisserie Chicken- 1 Whole Chicken(use all the white meat)
  • Salt and Pepper to season for dressing and the assembled salad
  • Part Skim Ricotta- 1 1/4 Cups
  • Fresh Mint- 1 Tbsp Finely Chopped
  • Optional (red onion) 1 Small Red Onion Thinly Sliced

Instructions

  • Whisk together the olive oil, citrus Chardonnay vinegar, lemon zest and the juice of one lemon, a finely chopped shallot and honey into a small bowl, and set aside.
  • Thinly slice the sugar snap peas in half. Add to a serving bowl and set aside.
  • Take the rotisserie chicken and cut into strips. I only use the white meat for this recipe. Set the dark meat aside for another time.
  • Add the rotisserie chicken, ricotta cheese and salt and pepper. Toss everything together until well combined. If you like red onion, then add as well at this time.
  • If serving right away, toss the dressing all over the sugar snap pea salad and let rest for about 20 minutes to allow all the flavors to meld and come together.
  • Enjoy and serve.
