Fresh herbs are the key to really tasty meals. You cannot compare dried mint versus using fresh. Mint really enhances all the flavors in this dish, and really takes it up a notch. You could also use fresh parsley or dill, but I do find that mint compliments all the flavors the best.

Yes, they can be eaten raw.
SHOULD I USE FRESH OR FROZEN SUGAR SNAP PEAS?
For this recipe, you should use fresh sugar snap peas. Buying them whole will save you money, and can guarantee that they will be fresh and crunchy. Frozen snap peas do not have the same crunch as fresh, and tend to be softer. I found these at my local grocery store.
HOW TO CUT THE SUGAR SNAP PEAS
Cut the sugar snap peas in half to make them easier to eat. You can even cut them in threes and slice the long way across to have strips. You could also cut them in half, but I do no think they are as pretty cut in half.
HOW TO STORE SUGAR SNAP PEA SALAD
This salad is really great for meal prep. You can make it ahead and eat this during the work week for lunch, or as a main dish any night of the week. The flavors get better the longer they sit.
CAN I SUBSTITUTE DAIRY FREE CHEESE?
Use your favorite dairy free cheese or you can leave out if needed.
HOW TO STORE THE CITRUS CHAMPAGNE DRESSING
I make the dressing separately and add as I’m using so as not to make the salad soggy. The dressing keeps well in the fridge stored in an airtight container for up to a week. Then, when you are ready to serve, add to the salad and enjoy.
CAN THIS RECIPE BE FROZEN?
I do not recommend freezing this sugar snap pea salad dressing. This is one recipe that will not hold up to freezing.

Absolutely. This salad can be served immediately, but tastes even better when it has time to sit and let the flavors meld together.

ARE SUGAR SNAP PEAS AND SNOW PEAS THE SAME?

- Optional (red onion) 1 Small Red Onion Thinly Sliced

- If serving right away, toss the dressing all over the sugar snap pea salad and let rest for about 20 minutes to allow all the flavors to meld and come together.
