Ingredients

  • 1 Can 15 Ounce Garbanzo Beans-rinsed and drained
  • 1/4 Cup Finely Chopped Onion
  • 1/2 Cup Chopped Celery
  • 2/3 Cup Mayonnaise
  • 1 Tbsp Dijon Mustard
  • 1 Tbsp Red Wine Vinegar
  • 1/2 Tsp Paprika
  • Salt and Pepper
  • 2 Romaine Lettuce Leaves
  • Gluten Free Pita or Gluten Free Bun
  • 2 Tsp Fresh Dill or Dried Dill

Instructions

  • Drain and rinse the garbanzo beans.
  • Add to a medium sized bowl.
  • Finely chop enough of an onion to equal a quarter cup. Add to the bowl.
  • Chop celery into small pieces. Add to the bowl.
  • Season well with salt and pepper.
  • Add the mayo, dijon mustard and vinegar to a small dish till everything is well combined.
  • Stir in the mayo mixture.
  • Add to your favorite bread of choice or salad.
