Cost savings- I wanted to break down what this actually cost to assemble for my lunch. Near my house, there is a great gluten free bakery. That’s where I buy all my rolls and pitas from. A four pack of the pitas and the rolls each cost $5 dollars even. Me using one pita cost me $1.25.
The can of garbanzo beans was 1.39 for the organic brand. The celery head was $2.50. The fresh dill was 1.99. In addition, I purchased organic romaine. However, I use this for my salads through out the week, and on sandwiches. The organic romaine cost $3.99 which was the most expensive item.
I already had the mayo, dijon mustard and vinegar. I always have dry spices on hand, so you can always use dried dill if you want to further cut down on cost, but fresh dill really does help enhance these flavors.
Can you guys believe this only cost $11.03 to make? As I stated, I had all the condiments and vinegar I needed on hand. My fridge and pantry are always well stocked, so that I never have to worry about running out of something. I previously purchased the pitas and the rolls and defrosted and warmed up when I was ready.
HOW MANY LUNCHES CAN YOU GET OUT OF THIS RECIPE?
The best part is that I can get two lunches out of this, which is great. Each day it cost me $5.51 to eat a hearty and healthy vegetarian lunch. You can always have a side salad, some potato chips or even a cup of soup.
I like Pacific Foods Creamy Tomato Soup for its taste, and the fact that it’s gluten free. The container of soup costs $3.99. So if I had creamy tomato soup with my sandwich- my total cost for lunch would be $7.50 cents.
In our area, the average price for a to go lunch order is anywhere from 15 to 20 dollars. While it may be more convenient to eat out or order something to go, this meal is much healthier, and is much more bang for your buck. Plus, you’re getting amazing nutrients eating this pita sandwich loaded with chick peas.

- 1/4 Cup Finely Chopped Onion
- 1/2 Cup Chopped Celery
- 2/3 Cup Mayonnaise
- 1 Tbsp Dijon Mustard
- 1 Tbsp Red Wine Vinegar
- 1/2 Tsp Paprika
- Salt and Pepper
- 2 Pieces Romaine Lettuce Leaves
- Gluten Free Pita or Gluten Free Bun
- 2 Tsp Fresh Dill or Dried Dill
