Have you ever heard of about chilled strawberry soup? Strawberry Soup is yummy and refreshing in every way. This soup is perfect on hot days straight from the fridge. My Strawberry Soup will become your summer fave.

Well, first off it’s so creamy and delicious. I originally thought it might taste like a smoothie in a bowl, but the texture was definitely different. It wasn’t too thick or too thin. The soup was lovely and perfect in almost every way. This soup begs to be eaten in one sitting. This soup is the essence of summer in a bowl.

CAN THIS SOUP BE MADE AHEAD OF TIME?

Absolutely. This make a head soup can be enjoyed all weekend long. This really is a summer favorite, but honestly it can be made all year long. Although, who can resist using freshly picked and ripe strawberries?

It tastes of sweet strawberries with a hint of low-fat buttermilk. It gets a little fancy by adding lemon peels and fresh thyme. At the end, garnish with a splash of buttermilk to really make this soup pop.

IS THIS CHILLED SUMMER STRAWBERRY SOUP GLUTEN-FREE?

Yes, this soup is gluten-free and also a Vegetarian dish.

WHAT IS SO SPECIAL ABOUT THIS RECIPE?

Chilled Summer Strawberry Soup is truly a perfect summers dish. This can be made for Mother’s Day, girlfriends luncheons and bridal showers. This soup is sophistication in a bowl. So delicious, you don’t expect the subtle hints of honey, buttermilk, lemon and thyme in every bite. This soup goes great with my Broccoli Kale Caesar salad.

This soup is so refreshing and irresistible. Make this soup to share with all the people you love. You will find yourself craving this again and again. Chilled Summer Strawberry Soup can be served as a starter, dessert or side along to any of your personal favorites.

This delicious summer soup is low in calories but so refreshingly satisfying. This recipe came to mind as we have been having pretty intense heat waves. The intense heat waves are getting too much for me, so I decided that cooking was not something I wanted to do.

Another plus is that this soup is vegetarian. It looks so good in a bowl and tastes even better than you can imagine. This soup is a great way to convince your kids to eat more fruit.

For a super silky smooth soup, strain the soup through a fine mesh strainer to remove strawberry seeds and the lemon peels. Another benefit of this recipe is that this soup is totally gluten-free. This soup should be stored in an airtight container and last 3 to 4 days in the fridge.

INGREDIENTS-

  • 2 Pounds Organic Strawberries
  • 1 Cup Low-fat Buttermilk
  • 4 Peels from a Lemon
  • 2 Tsp Honey
  • 5 Sprigs of Thyme removed from the stem
  • Buttermilk as a garnish

INSTRUCTIONS-

  • First, wash the strawberries and cut the tops off.
  • Add to a blender.
  • Pour 1 Cup Buttermilk on top of the strawberries in the blender.
  • Star the blender and puree until thoroughly combined and smooth.  Do not over-mix.
  • Take 4 peels from a lemon and drop into the puree.
  • Take 5 sprigs of Thyme and add to the puree.
Chilled Summer Strawberry Soup
  • Put the soup into a bowl or a covered container overnight.
  • Stir in honey.
  • To serve-strain the soup so that there are no seeds, peels or thyme.
  • Ladle soup into a bowl.  
  • Add a light swirl of buttermilk to the top of the soup.  Garnish with lemon peel strips and fresh thyme if desired.
