It tastes of sweet strawberries with a hint of low-fat buttermilk. It gets a little fancy by adding lemon peels and fresh thyme. At the end, garnish with a splash of buttermilk to really make this soup pop.

For a super silky smooth soup, strain the soup through a fine mesh strainer to remove strawberry seeds and the lemon peels. Another benefit of this recipe is that this soup is totally gluten-free. This soup should be stored in an airtight container and last 3 to 4 days in the fridge.
INGREDIENTS-
- 2 Pounds Organic Strawberries
- 1 Cup Low-fat Buttermilk
- 4 Peels from a Lemon
- 2 Tsp Honey
- 5 Sprigs of Thyme removed from the stem
- Buttermilk as a garnish
INSTRUCTIONS-
- First, wash the strawberries and cut the tops off.
- Add to a blender.
- Pour 1 Cup Buttermilk on top of the strawberries in the blender.
- Star the blender and puree until thoroughly combined and smooth. Do not over-mix.
- Take 4 peels from a lemon and drop into the puree.
- Take 5 sprigs of Thyme and add to the puree.
- Put the soup into a bowl or a covered container overnight.
- Stir in honey.
- To serve-strain the soup so that there are no seeds, peels or thyme.
- Ladle soup into a bowl.
- Add a light swirl of buttermilk to the top of the soup. Garnish with lemon peel strips and fresh thyme if desired.
