There is something so special about summer in that it brings an abundance of fresh fruits and vegetables. Heirloom tomatoes not only taste delicious, but provides fresh flavor. This tart comes together in about an hour and tastes absurdly delicious. Try to not eat this right out of the oven, if you can wait. It’s best when eaten at room temperature.
GLUTEN-FREE TARTS ARE PERFECT FOR LUNCH OR BRUNCH
Lately, I have been loving a good Sunday morning brunch. Something about having a mimosa with a savory tart just about makes my mouth water. This tart takes less than 10 minutes to prep and only about 25 minutes in the oven. If you find out you have a last minute friend coming over for Breakfast or Brunch- why not serve them a delicious savory tart that is gluten-free? I can promise you that your friends will have no idea that this is gluten-free.
My GF Tomato and Brie Tart would also be a great last minute appetizer. The best part is that you can switch up your ingredients if you are missing 1 or 2. I truly hope you love this recipe as much has I do.
BEST TOMATOES FOR A TART?
For this specific recipe, I used fresh heirloom tomatoes and herbed brie cheese. For this tart, you can honestly use any fresh veggies you like. To keep it nice and quick, slice your tomatoes on the thin side.
If you can for this recipe, use good quality tomatoes. Right now, heirloom tomatoes are in abundance. However, during the winter this can definitely be made as well. Just use vine ripe fresh tomatoes.
WHAT INGREDIENTS SHOULD BE USED IN A TART?
My recommendation for a sweet or savory tart is that use whatever ingredients are in season. Seeing that we are heading into Fall- apples, butternut squash and pumpkin would be great choices.
CAN YOU USE STORE BOUGHT PUFF PASTRY FOR THIS RECIPE?
Of course you can. While I can make home-made puff pastry, I do not always have the time. Schar makes a great gluten-free puff pasty. I found this at my local grocery store in the freezer section. This saves so much time. Just remember that it does need about 3 hours to thaw before using.
WHAT IS A TART?
A tart is a baked dish that has an open pastry containing a filling of either fruit or vegetables. Some tarts even contain custard. The pastry is usually shortcrust pastry. Tarts are a way of showcasing vibrant and ripe produce. Tarts can be made sweet or savory.
WHAT IS PUFF PASTRY?
Puff pastry is a flaky light pastry made from laminated dough and butter. So what that really means is that it is alternating layers of butter and dough. High fat butter is needed to get a nice a flaky tart. The only ingredients used are water, flour, butter and salt.
Making puff pastry from scratch is definitely harder than I originally thought. It involves wrapping a cold block of butter in dough, rolling it out, and repeating the rolling and filling multiple times until you’re left with many layers of pastry dough. The dough also needs to chill between each turn of the rolling and folding. It can definitely be made but it is somewhat time consuming.
WHAT TYPES OF CHEESES WORK BETTER FOR TARTS?
I love making tarts with soft cheeses. The first reason being that soft cheeses melt evenly. Brie, Goat Cheese, Feta, Mozzarella and Boursin work well. Pick your favorite cheese and you can use what you have on hand or mix and match.
I do not recommend using pre-shredded or pre-crumbled cheese. The reason is that these types of cheeses do not melt as evenly. Also, pre-crumbled or shredded cheese also tends to have less moisture, making it more likely to burn.
WHAT SUBSTITUTIONS CAN BE BE USED?
Brie adds a really nice bold flavor to this tart. Not everyone cares for Brie and that is totally ok. You can use herbed Goat Cheese or even Cream Cheese. Creme Fraiche and Mascarpone would also be great with a little honey.
BEST TIPS FOR BAKING TIME
Whenever you’re baking puff pastry, the trick is to get the top to brown nicely while still making sure the bottom of the pastry is cooked through. If you find that the puff pastry needs more time, tent some foil over the top of the tart for a couple more minutes. Baking your tart on parchment paper is a good idea because it makes the transfer to a wire rack so much easier.
Also, to prevent the tart from puffing while cooking- pierce the puff pastry with forks all over. Also, half way through cooking- use an egg wash for the crust to get a nice golden crust.
WHAT TO SERVE WITH A GF TOMATO AND BRIE TART?
You can serve this tart with a green salad, Caesar salad, potato salad or a fruit salad with oranges, red onion, fennel and a light citrus dressing. This would also go great with my GF Parmesan Rosemary Zucchini Fries.
INGREDIENTS NEEDED FOR GF TOMATO AND BRIE TART-
- 1- 8.8 Ounce Schar Puff Pastry- Frozen Pastry Dough-make sure it is Gluten Free and not pre-cooked
- 1 1/2 to 2 Heirloom Tomatoes or Vine Ripened Tomatoes-sliced
- 3/4 Pound to 1 Pound Herbed Brie Cheese
- Thyme
- Mustard
- 1 Egg
- Salt and Pepper to taste
INSTRUCTIONS ON HOW TO MAKE GF TOMATO BRIE TART-
- Trim off the ends of the heirloom tomatoes and slice about 1/8 inch thick.
- Remove the puff pastry from the packaging. If using Schar puff pastry, it has to defrost for 3 hours before using.
- Preheat oven to 400 F and line a baking sheet with parchment paper. For the Schaer puff pastry- it does need to be kept in the freezer. I thawed mine for 3 Hours before using. The Schar package comes with two rolled gluten-free puff pastries. I only used 1.
- Unfold the puff pastry onto the parchment lined baking sheet.
- Using your fingertips, gently pinch the seams closed.
- Use a knife to score about 1/2 border all the way around. This does not have to perfect. I like it to look more rustic.
- To make sure your puff pastry doesn’t puff up when cooking-pierce all over with a fork.
- Spread a thin layer of 2 teaspoons mustard all over the dough.
- I dried my tomatoes off with a paper towel before assembling.
- Arrange the tomatoes on top and season with salt and pepper.
- Cut small pieces of the herbed brie cheese and scatter them over the tops of the tomatoes.
- Use 4 sprigs of fresh Thyme to sprinkle on the top before putting into the oven.
- Bake for about 20-25 minutes, and half-way through whisk up one egg and brush the crust with the egg wash. Bake until the crust is puffed and golden and the cheese has thoroughly melted.
- Remove from the oven and place on a rack to cool for at least 15 minutes.
- Slice and enjoy.

- Dust the crust with the egg wash half way through baking to help the tart get nice and golden in color.
