WHY IS A GF BROCCOLINI KALE CAESAR SALAD SO GOOD?
This GF Broccolini Kale Caesar Salad is everything you could ever want a salad to be. It has texture, color and fresh greens, and the best creamiest dressing. For one thing, this salad is easy to throw together, colorful, healthy and so filling. Eat this for dinner or bring to work for a delicious and healthy lunch any day of the week.
Broccolini Kale Caesar Salad is a fresh crunchy salad that comes together in a pinch- and the taste is seriously so good. This is seriously one of the best and easiest salads to make. Of course Caesar Salads these days seem to be popular with just about everyone. Me included. Therefore, why not try something new to eat? And this salad will be so addicting you will want to eat this over and over.
WHY USE KALE INSTEAD OF ROMAINE LETTUCE?
Instead of using Romaine lettuce, we switch things up a bit by swapping out the standard lettuce and adding kale as a sub-in. Kale is also low in calories which is an added bonus. Kale is a superfood packed full of flavor and nutrition.
I love broccolini for its sweet and mild flavor, and the fact that it’s so easy to prepare and cook. That being said, broccolini is relatively cheap to buy and goes a long way in this recipe. It’s the florets that crisp up delightfully in the salad, and leaving the stems on is definitely encouraged.
This salad recipe comes together rather quickly and after roasting the broccolini, only takes about 15 minutes to assemble. After that, grab a fork and dive in.
Is there anything a Caesar dressing can’t make better? All vegetables benefit from the creamy drizzle and anchovy flavor of a good Caesar dressing. Here we marry =kale and broccolini to the dreamiest of combinations.
Who knew a salad could be so addictive? This creamy and garlicky GF Broccolini Kale Caesar Salad is loaded with greens, red onions and chick peas. To really make this salad over the top-I charred some Broccolini and added it throughout this salad. What could honestly be better than that?
In short, my Caesar dressing is home made and is egg free. It has hints of garlic, dijon, red wine vinegar and anchovy in every bite. For this recipe, I used anchovy paste and it really is a necessity in this recipe.
Also, the added bonus of using Kale is that it’s pretty hearty and can hold up to the dressing without becoming overly soggy. And I can tell you no one wants a soggy dressing.
INGREDIENTS-
- 4 Cups of Kale
- 1/2 of a Small Red Onion Finely Sliced
- 3/4 Cup of Chick peas
- 2 Bunches of Broccolini-
- 1/2 Cup Full Fat Hellman’s Mayo
- 1/4 Cup Parmesan Cheese
- 3 Tsp Anchovy Paste
- 2 Tsp Red Wine Vinegar
- 1 Tsp Dijon Mustard
- 2 Tsp Garlic
THE SALAD DETAILS- GF BROCCOLINI KALE CAESAR SALAD
- Take the 2 bunches of Broccolini and slightly trim the ends off. If the stalks are on the thicker side-slice down the middle.
- Toss the Broccolini with olive oil and salt and pepper.
- Roast in the oven at 425 for 14-17 minutes.
- Take out of the oven when done and set aside.
- Take 4 full over-sized cups of Kale and add to a medium bowl.
- Slice the Red Onion finely and add to the kale.
- Add the Chick Peas and set aside.
- Add the Broccolini once in has slightly cooled. If you add it when it comes out of the oven, the kale will just get wilted.
For the Dressing-
- Take a half a cup of Hellman’s Full Fat Mayo and add to a small mixing bowl.
- Add the garlic, dijon mustard, anchovy paste, red wine vinegar and parmesan cheese. Stir well to combine.
- Assemble the salad by adding the charred broccolini and toss the kale with the dressing.
- Serve and enjoy.

Notes
- This salad is best served right away. You can make this ahead. Just follow the directions and do not put on the dressing until you are ready to serve.
