Strawberry No Churn ice Cream

Strawberry no churn ice cream is great for an easy after dinner dessert, or honestly any-time during the summer. For a great summer party or Fourth of July celebration, a DIY ice cream sundae bar will be the biggest hit. I love no bake desserts like my no bake Russian Cream Dessert, especially when the weather gets super hot here in New England. Just as I am writing this, our weather is going to be in the 90’s this weekend.

One of my favorite things to do during the summer is take my 2 Boston terriers to go for ice cream. Well, of course they have some, and so do I. I love eating ice cream. Always have and always will. There is something so refreshing about eating cold ice cream when it’s so unpleasant outside.

IS STRAWBERRY NO CHURN ICE CREAM HARD TO MAKE?

Have you ever wanted to make ice cream at home but thought it’s too hard or impossible without and ice cream maker? Ya’ll, I’m here to tell you that no churn ice cream is totally attainable and so easy to make at home. This ice cream base is the easiest way to make creamy ice cream at home.

Really good ice creams can be time consuming and difficult to achieve. Taking on the task of making your own homemade ice cream can seem daunting. There is a way to avoid all of that. It only takes a stand mixer, a couple bowls and a few ingredients to make.

WHAT DOES NO-CHURN MEAN?

No churn means there’s no need for an ice cream machine to make creamy ice cream. Most home made ice creams start with an egg custard base that is cooked. The custard is then added to the ice cream machine that has been pre-frozen and churns until the custard turns into a creamy delicious ice cream.

WHAT’S IN THIS NO-CHURN ICE CREAM?

The homemade ice cream ingredients needed for this recipe are heavy whipping cream, sweetened condensed milk and vanilla extract. This no churn ice cream base is for vanilla ice cream but there are so many ways to change it up and create so many flavor combos.

You can use an 8×5 inch bread loaf pan for your container. If you will be making ice cream often, consider investing in an insulated ice cream tub or container. To serve, allow the ice cream to freeze overnight and viola. You have home-made no churn ice cream that is so smooth and creamy. You’ll wonder how you ever went without this?

This type of ice cream will melt a little quicker because it doesn’t have a custard base but that’s totally okay. It really gives more incentive to eat it faster.

Some of my favorite varieties are: Strawberry and Cream, Key Lime Pie, S’mores Delights, Salted Caramel, Mint Chocolate Chip and Peanut Butter Cup.

INGREDIENTS FOR NO CHURN ICE CREAM-

  • 2 Cups Heavy Whipping Cream
  • 14 ounce Sweetened Condensed Milk- 1 Can
  • 1 tablespoon Vanilla Extract
  • 1 pound or container Fresh Organic Strawberries

INSTRUCTIONS HOW TO MAKE 4 INGREDIENT STRAWBERRY NO CHURN ICE CREAM-

  • In a large bowl, whisk together the condensed milk and vanilla.
  • Chop up the strawberries into small pieces.  I like smaller bites of strawberries but you can leave larger pieces if you like.

  • In a stand mixer or a medium bowl, beat heavy cream until stiff peaks form about 2-3 minutes.
  • With a rubber spatula, gently fold whipped cream into the condensed milk mixture.
Fresh Whipped Cream
  • Gently fold together until fully mixed. DO not over-mix. The finished results won’t be as light. Then gently fold in the diced fresh strawberries.
  • Transfer the mixture to metal loaf pan.  Spread evenly to flatten out the top.
Strawberry No Churn Ice Cream
  • Cover the top portion of the no churn ice cream with plastic wrap.  You want it to be sitting right on top so you get no freezer burn.
  • Let sit at least 6 hours but should be set over-night for best results.
  • Let ice cream stand at room temperature a couple minutes before serving.

Notes

  • Gently fold together until fully mixed. DO not over-mix. The finished results won’t be as light.
  • A metal container will freeze the ice cream faster and better than a glass container.
  • Chop up your mix in or additions finely before adding.
  • No churn ice cream melts faster than regular ice cream.
  • The ice cream can remain frozen for up to 2 weeks.  Make sure the container is sealed tightly to avoid freezer burn.

    I made this yesterday and pureed the Strawberries. Then I swirled the puree into the cream mixture. Its got great flavor. I let it get soft in my dish before eating because I like soft ice cream. Ill be making this again!
