WHAT IS BRIE CHEESE?
Brie is a soft cheese with a rather mild flavor. Brie cheese is a soft cow’s milk cheese. The name came about due to the region in France where it originally originated. Brie cheese has a white rind. The rind is usually eaten.
WHAT DOES BRIE CHEESE TASTE LIKE?
Brie has a mild, buttery and creamy taste. Often times, people think the rind isn’t edible, but that just isn’t true. If you’ve never tried brie before, why not try tasting it with the rind? I think you will be pleasantly surprised.
SHOULD BRIE BE SERVED WARM OR COLD?
I find that brie cheese tastes best at room temperature or warmed in the oven, like this recipe. Eating cold brie cheese means that you could find that it tastes bland.
For brie cheese- take out of the refrigerator about an hour before eating. Allowing it to come to room temperature will help it be nice and creamy. This does not apply for this recipe.
WHAT FRUITS GO BEST WITH BRIE CHEESE?
Acidic foods will really bring out its velvety texture. Try fruits like grapes, apples, or even pears. Fig jam and honey also complement brie very well.

HOW TO STORE BRIE CHEESE?
Cutting into the brie log means that the cheese needs to be eaten within the next several days. Always refrigerate. A trick is to wrap the cheese with waxed or parchment paper. This will allow the rind to breathe and not dry out. Plastic wrap isn’t brie’s friend.
TIPS AND TRICKS
- If your puff pastry sheet tears or gets a hole, fix it with your fingers.
- Make sure you put your puff pastry in the fridge before placing in the oven for 20 to 30 minutes. This step is crucial.
- Allow to cool for 5 minutes before serving. This prevents all the cheese from oozing out.
- You do not need to take the rind off. The rind is edible and adds texture.
- If the cheese has an odd smell or a strong flavor, that usually means it has gone bad or that it hasn’t been stored properly.
- Schar puff pastry needs to thaw for 2-3 hours before use.
- It is best to use a brie wheel and not a wedge.
- If cranberries aren’t your jam- you can drizzle some honey over the top.
- Nuts and Fruit tossed in jam are good options too.
- Use parchment paper for easy removal.
WHAT IS THE BEST WAY TO SERVE THIS RECIPE?
By baking the brie in the puff pastry over parchment paper makes moving it so much easier. You can put it on a beautiful platter, or combine this and make a lovely cheese platter.
INGREDIENTS NEEDED FOR GLUTEN FREE CRANBERRY AND BRIE PUFF PASTRY
- 1- 8 Ounce Brie Cheese Log
- 1 Tbsp Water
- 3/4 Cup Cranberry Sauce
- Fresh Sprig of Rosemary-minced
- 1 Large Egg
- 1- 8 Ounce Sheet Schar Puff Pastry-
- Optional- 1-2 Tablespoons of Cup 4 Cup GF Flour if needed to roll out dough
INSTRUCTIONS HOW TO MAKE GLUTEN FREE CRANBERRY AND BRIE PUFF PASTRY-
- Preheat the oven to 400 degrees F.
- Line a baking sheet with parchment paper.
- For this recipe, you can use my cranberry recipe, or you can buy jellied cranberry sauce. Either will work.
- The dough will need to be rolled out slightly. One reason we are doing this is to make the puff pastry slightly thinner, and get rid of the creases. If it breaks, wet your fingers with water and pinch the pastry dough back together. We are not trying to make the sheet much bigger. Just nice and smooth.
- After rolling, place the round of brie in the middle. Make sure to leave the rind on.
- Top the rind with cranberries.
- Fold the corners over the cheese forming a neat package. If you have too much pasty in some areas, trim it with a sharp knife. You can even use the trimmings to decorate.
- Take 1 egg and stir with one tablespoon of water to make an egg wash. I use a fork to combine. Using the egg wash, brush the puff pastry all over. This will help the puff pasty have a beautiful golden color.
- Remove the rosemary pieces off the sprig, and sprinkle the rosemary over the top
- Let the prepared puff pastry sit in the refrigerator for 20 to 30 minutes to firm up before baking. This step is crucial.
- Optional- you can add sprinkled sugar over the top for some added crunch if you like.
- Bake in the oven for 15-25 minutes or until golden brown. If it is browning too much- cover loosely with foil.
- Let sit for 5 minute before serving. This will give the cheese time to firm up a bit.
