The next time you find some amazing peaches, and being in New England means I can get my hands on some amazing fresh and juicy peaches. Peaches are hands down my favorite fruit. Why not get some peaches and whip up this flavorful and sweet salad. My love for burrata cheese and peaches marry so well together with this recipe-Grilled peach and burrata salad with balsamic reduction.
WHAT ARE THE BEST PEACHES TO USE FOR GRILLING?
When it comes to grilling peaches, freestone peaches are your best choice. You want to look for peaches that are still firm when squeezed. Do not use ripe peaches for this recipe. Ripe peaches have more sugar which means they burn faster and are too tender to grill.
Grilling peaches has the ability to transform a normal fruit to the most stunning dessert or side dish with nothing more than heat. To me, grilled peaches are a kind of magic that happens during dinner or for the most succulent desserts. Sweet fruit is great for pairing with cold wine and ice cream.
For this recipe, I am using my beautiful weber grill. If you do not have an outdoor grill-do not fret. You can definitely do this in the house. You can use either a cast iron pan or a griddle so that you get those nice grill marks. To get a nice carmelization, coat the peaches with a little olive oil to prevent sticking. TIPS AND TRICKS FOR PERFECTLY GRILLED PEACHES EVERY TIME
Grilled peaches are honestly rather simple. They only require butter or olive oil. Here is how to make the perfect grilled peaches in just a couple of step.
- First, freestone peaches are essential to use when grilling. Ripe peaches have more sugar which causes them to burn rather easily and they are too tender to take the heat. Cutting the peaches and grilling them in halves rather than slices prevents them from overcooking, and really does make the peaches easier to handle. Brushing the peaches with olive oil or butter helps prevent sticking.
- Secondly, using medium heat to grill peaches is best. Grill the peaches uncovered for about 3-5 minutes per side. Do not reposition once they are placed on the grill. Those beautiful grill marks are caused by letting them be and patience.
- Thirdly, the finished peaches should be tender but not falling apart. You can pull the skin off if you like, but I like leaving it on.
WHAT IS A BALSAMIC REDUCTION?
A balsamic reduction is made from a quality balsamic vinegar. It is naturally gluten-free and also paleo friendly. The balsamic vinegar is simmered in a sauce pan until it has reduced by almost half. This results in a concentrated flavor. The longer the reduction simmers, the thicker it will become. It has a tart flavor profile mixed in with sweetness in every bite.
Can we talk about balsamic reductions for a moment. Now, you can definitely make a balsamic reduction. But for me to stay motivated in my kitchen during the busy work week, sometimes pre-made is what I need. I found a great balsamic reduction at my local grocery store and it was expensive, but totally worth the investment. There is nothing like a sweet a thick balsamic syrup drizzled on top of the grilled peaches and burrata.
INGREDIENTS NEEDED FOR GRILLED PEACHES AND BURRATA SALAD WITH BALSAMIC REDUCTION-
- 8 Ounces Burrata Cheese
- 3 Peaches
- Drizzle of Balsamic Reduction for each plate
- Salt and Pepper to taste
- 2 Tbsp Olive oil or butter to brush on the peaches for grilling- couple tablespoons at most
INSTRUCTIONS FOR PREPARING GRILLED PEACHES AND BURRATA SALAD WITH BALSAMIC REDUCTIO
- Heat the grill on medium heat.
- Slice the peaches in half to prevent them falling into the grates. I also like having the halves on a salad.
- Brush the peaches with olive oil.
- Grill the peaches for a couple minutes on each side until you have grill marks the they have started to caramelize.
- To assemble the salad, add a whole peach which would be 2 slices and the burrata to a plate.
- Split the burrata in 3 pieces to split between 3 salads.
- Salt and Pepper to taste.
- Lastly, add the balsamic reduction and squeeze the bottle over the plate to make lines.
- Optional- You can definitely add a green component if you like. Arugula pairs so nicely with this, but you can use another type of salad if you do not prefer arugula like frisbee or spinach. I do love the peppery taste of the arugula with the sweet peaches and the balsamic reduction.

Notes
- After grilling your peaches, all you have to do is assemble the plates. Add some arugula to a plate along with a couple of peaches, a generous piece of burrata and some salt and pepper. To top it off, finish with the balsamic reduction.
