If you have recently been diagnosed with Celiac or decided to follow a gluten-free diet, should you continue eating egg noodles? In this post, were going to talk about gluten, why egg noodles are not typically gluten-free and what brands you can find that are gluten-free. In this post, we’re going to be talking in depth about egg noodles and all the ins and outs.
ARE EGG NOODLES GLUTEN-FREE?
Typically, no egg noodles are not gluten-free. Unfortunately, most egg noodle brands first ingredient is wheat flour and eggs. Some do contain milk, and some do contain preservatives or additives.
WHAT ARE EGG NOODLES?
The main difference between regular pasta and egg noodles are first and foremost, eggs. Egg noodles are made of unleaded dough that is cooked in boiling water. Traditionally, egg noodles are made from eggs, salt and wheat. Egg noodles are typically long flat strips of dough, but they can vary in size and shape.
WHAT IS GLUTEN?
Gluten is a protein found in wheat, barley and rye. This protein helps food hold shape and acts like a glue. Of the gluten-containing grains, wheat is the most common.
These days, most cereals, soups, breads and pasta do contain gluten. Many processed foods also do contain gluten. There are two main proteins which are gluten and gliadin. Gliadin is responsible for the many adverse health effects.
For example, when flour is mixed with water, the gluten proteins forms almost a sticky like texture and provides a glue-like bond consistency.
Most people these days can tolerate gluten without any issues. However, it can cause serious problems for people with Celiac Disease. This can also include people with a gluten sensitivity.
Celiac disease is considered an auto immune disorder in which the body treats gluten almost like an invasion. The immune system starts attacking the gluten as well as the lining of the gut. Generally speaking- damage from gluten can cause nutrient deficiencies, anemia, digestive issues and an increased risk of many diseases.
WHERE TO BUY GLUTEN FREE EGG NOODLES?
These days, you can buy pretty much anything and everything online. Amazon sells just about everything needed. You can also visit your local grocery stores or speciality markets. My local Whole Foods carries gluten-free egg noodles.
CAN I MAKE MY OWN EGG NOODLES?
ABSOLUTELY. Making egg noodles at home is much easier than you might think. Some grocery stores do carry gluten-free egg noodles, but for the majority-it can be rather hard to find.
ARE EGG NOODLES GLUTEN-FREE?
Egg noodles are typically not gluten-free. The main ingredient is flour and eggs. However, these days there are so many more choices for gluten free options. I have found some great egg noodles that are gluten-free. You just need to know where to look. If you cannot find store bought gluten-free egg noodles, why not try making your own gluten-free egg noodles.
DO NOODLES FROM A CHINESE RESTAURANT CONTAIN GLUTEN?
Chinese egg noodles are definitely not gluten-free. Almost all noodles that are used in Chinese cooking do contain gluten. Lo main noodles, chow mien noodles and wonton noodles all contain gluten from the wheat that is used to make them. My honest recommendation is to avoid them when eating at restaurants.
WHAT TYPE OF CHINESE FOOD NOODLES ARE GLUTEN-FREE?
The two safest types of noodles to order would be Chow fun (wide rice noodles) and Mei fun (thin rice noodles. These noodles are safe to consume as long as they’re actually pure rice. Make sure the servers or managers know the ingredients to make sure.
ARE EGG NOODLES DAIRY-FREE?
Most store bought egg noodles do tend to be dairy-free. However, if you are allergic or lactose intolerant, always make sure you double check the labels to make sure they are safe to eat.
ARE EGG NOODLES VEGETARIAN?
For all you vegetarians, egg noodles are okay and safe to eat. There are no animal products in egg noodles.
ARE EGG NOODLES SAFE TO EAT IF I’M VEGAN?
Due to the nature of how egg noodles are made and their ingredients- egg noodles are not safe for vegans to consume. Seeing that eggs are one of the primary ingredients, for a vegan diet eggs are not part of a vegan diet.
WHAT KINDS OF RECIPES CAN EGG NOODLES BE IN?
I’ve seen egg noodles used in beef stroganoff, meatballs, soups and casseroles.
BRANDS THAT MAKE GLUTEN-FREE EGG NOODLES?
The few brands that I have found to make gluten-free egg noodles are using gluten-free flours and starches in place of wheat flour. Some of the ingredients are: white rice flour, potato starch, potato flour, tapioca starch etc.
If you do decide that you do not want to make these noodles at home- I’m here to help with that. There are a few brands available that make gluten-free egg noodles.
Jovial is a well known name in the gluten-free community. This is my first choice when wanting to use an egg based pasta. There are only two ingredients and those are organic brown rice flour and organic eggs. This pasta does hold it shape relatively well. My one recommendation is to not over-cook these noodles as they will fall apart. I recommend testing the pasta two to three minutes before the timer goes off, so as not to over-cook them.
These noodles are a great option if you need something that is kosher. The ingredients are: tapioca starch, potato flakes, potato starch, pasteurized egg whites, emulsifier, anthem gum, spices.
- Gefen Wide Noodles-
The ingredients are potato starch, whole eggs, walnut oil and salt.
The ingredients are rice flour, tapioca starch, millet flour, egg yolk-dried, xanthum gum, water.
EGG NOODLE PASTA WITH PANCETTA AND MASCARPONE CHEESE
Here is one of my faves- it’s super easy, fast, and a last minute go to any night of the week. I am so excited to share this recipe with you all. The pasta is loaded with flavor and comes together in less than 2o minutes. It’s not overly heavy and is so light and creamy. A great salad option is my gluten free Broccolini Kale Caesar Salad. This would go great with this pasta dish.
For this pasta dish, I decided to use mascarpone cheese. It has the thick and creamy consistency Iooking for. You want something that coats the pasta really well and sticks.
Instead of prosciutto, I use pancetta. I love using pancetta for a couple reasons. First of all, pancetta is less fatty in my opinion. Secondly, it has the right amount of saltiness that this dish needs. Thirdly, it crisps up so nicely in a pan, and really has that crunch that is needed to balance out the creaminess of the dish.
If you do find that the sauce is too thick-set a side a little of the water that the pasta sat in and thin out the sauce.
INGREDIENTS NEEDED-
- 1 4 oz Container Cubed Pancetta
- 1- 4 ounce Container of Mascarpone Cheese-
- 6 Tablespoons of Fresh Minced Parsley
- 1- 9 oz Box GF Egg Tagliatelle Pasta
- Salt and Pepper
- 4 Tbsp Grated Parmesan Cheese
- 2 Tbsp Salt for Pasta Water
- Reserve a little of the boiled pasta water to thin out mascarpone cheese.
INSTRUCTIONS-
- In a small non stick skillet- set stove top to medium high heat.
- Add the pancetta and let it crisp up nicely-about 10 minutes or so. You do not need to add any olive oil for the pancetta.
- In a pasta pot, fill with warm water and let it come to a boil.
- Once boiling, season well with salt and add the egg noodles and cook to al dente. These noodles cook a couple minutes earlier than the box says, so keep that in mind. Tip- set aside a little of the pasta water to use in case you need to thin out the mascarpone cheese.
- Once cooked, remove and set aside.
- In a bowl, add the pasta.
- Add half the container of the mascarpone cheese and stir to combine. If too thick, add a little bit of pasta water to the bowl to thin the mascarpone cheese out.
- Add the pancetta, fresh parsley and salt and pepper.
- Stir to combine and serve right away. This dish does best when served right away.

Notes
- Fresh parsley is best for this recipe.
- Pancetta does provide salt so do not overly season your pasta with salt.
- Do not rinse your pasta after it has been cooked.
- Save a little of the hot pasta water to thin the cheese mixture out.
