I’ve tried a bunch of mug cakes and I really did not enjoy them. I have always loved the concept, but hate eating a spongy, dry cake.
Over the past couple of weeks, I have been craving chocolate like nobody’s business. When the craving comes on- I need chocolate right here, right now. And it so happened that we didn’t have any dessert in the house. Bottom line- I started trying out mug cake recipes.
I figured making a mug cake would be easy. I figured the first try would be perfect. Well, I was wrong. The mug cakes were either dry or spongy. Either too sweet or not sweet enough. Finally, I seemed to have found the perfect combo.

CAN MUG CAKES BE MADE WITHOUT EGGS?
Yes, mug cakes are made without eggs. Eggs make them spongy.
If you think about it- a whole cake usually takes one or two large eggs. Why would you add an egg to a single serve mug cake? The logic just isn’t there. Just leave the eggs out and you have the perfect mug cake recipe.
WHAT MAKES THIS RECIPE SO DARN GOOD?
- For starters, in less than 5 minutes you’ll go from basic ingredients to a single serve cake with almost no effort.
- The single serve portion size is great for anyone living alone, or for inviting your best friend over. You can make as little as 1 or as many as 10.
DO MUG CAKES REHEAT WELL?
Honestly, no they do not. The texture is never the same when you reheat. These taste best when eaten right away. You can whip this up in a couple minutes after dinner. Grab a blanket, make a cappuccino and enjoy.
WHICH GLUTEN FREE FLOUR SHOULD I BE USING?
Not all gluten free flours are created equal. For the best success, I use Cup 4 Cup Gluten Free Flour or King Arthur Gluten Free 1 to 1 Flour. I can say these both work well.
CAN I PUT ANYTHING IN THE GLUTEN FREE CHOCOLATE MUG CAKE?
For sure. I made mine by putting chocolate sauce in the middle of the mug cake.
C AN A MUG CAKE BE MADE DAIRY FREE?
They sure can. Just substitute almond milk or coconut milk for a dairy free alternative.
WHAT TYPE OF BAKING POWDER SHOULD I USE?
I use aluminum free baking powder.
WHAT TOPPINGS CAN BE ADDED?
Depending on your mug cake flavor, you can add sprinkles, chocolate chips, candy. I love to top mine with fresh whipped cream, extra chocolate sauce and fresh strawberries.
TIPS AND TRICKS
- You can make this mug cake in the oven or the microwave. If you prefer to not use a microwave, then make sure you are using an oven safe mug. Place the mug on a baking sheet and bake for 15-20 minutes at 350 degrees F.
- To cut down on clean up- you can mix all the ingredients directly into the mug. I personally think it is a little easier to mix the ingredients in a bowl and pour them into the mug, but you can honestly do whichever method you prefer.
- To cut down on the mess in the microwave- the cake will rise and expand as it baking in the microwave. Put a paper towel underneath your mug in the microwave to catch any overflow.

- All Purpose Gluten Free Baking Flour- I use Cup 4 Cup or King Arthur’s 1/4 Cup
- Powdered Sugar- 2 Tbsp ( 3 if you like it sweeter)
- Baking Powder- 1/4 Tsp
- Milk- 1/4 Cup plus 1 Tbsp
- Stonewall Chocolate Salted Caramel Sauce- 1 Tbsp
- Pinch of Salt
- Vegetable Oil- 2 Tbsp
- Dutch Unsweetened Cocoa Powder- 2 Tbsp
INSTRUCTIONS ON HOW TO MAKE GLUTEN FREE CHOCOLATE MUG CAKE
- Add the all the dry ingredients to a medium sized bowl. Whisk together to combine.
- Add the milk and vegetable oil until all the ingredients are combined and has no clumps.
- Take half the batter and add to a microwave safe mug.
- Add the chocolate sauce.
- Top the remaining batter over the chocolate sauce.
- Cover the mug with a paper towel and microwave on high for 70 to 90 seconds.
- Serve and enjoy.
