You can honestly use any herbs that you like. I always say that fresh is best when it comes to herbs. Rosemary, thyme, parsley and chives are a couple of great options. For this recipe, I decided to used chives and parsley.

- Butter and parsley are in my opinion the essentials. Make sure the potatoes are seasoned well with salt.
- Garlic is definitely optional, but does help enhance the potatoes flavors. Add the garlic after steaming.
- Old bay is a classic, and perfect for potatoes.
- Fresh herbs- try adding rosemary, thyme or sage.
- Chives are great in potatoes.
- Parmesan cheese makes everything better- including these potatoes.

Sure can. Just use vegan butter or olive oil in place of the butter in this recipe.
TIPS
- Arrange the largest potatoes on the bottom of the basket and the smaller ones on top.
- Make sure you cover your potatoes. You cannot steam potatoes unless the lid is on.
- If your potatoes are really small, start checking at 10 minutes. For larger potatoes, check at 15 minutes.
- Stick a fork in the potatoes- if it slides in and out easily then they’re done. I always check a few just to be sure.
- Season your potatoes really really well with salt and pepper.
- Waxy potatoes are best used for steaming as they do not absorb too much liquid.
- Add your potatoes to a pot filled with cold water and then bring it to a boil. This helps ensure even cooking, and prevents your potatoes from being soft and cooked on the outside, but uncooked on the inside.
- Try to cook potatoes that are around the same size so they all cook around the same time.
- Do not peel your potatoes.
- Do not over-boil your potatoes.
